Depending on what type of cameras you are working with, color saturation distortion is often normal behavior. If the camera has a CMOS sensor instead of a CCD sensor, the camera's color detection will be effected by the texture of an item more so than the actual color of the item.

 

For example; a black wool shirt may appear as black while a silk black shirt would appear as purple.

 

Another common issue is that grass and trees will appear purple. This is a result of the way that the camera's motherboard interprets the item's texture.

 

Unfortunately there is no settings fix for this issue. The only way to get a better picture would be to replace the cameras with cameras that have a CCD image sensor in them.
